We don’t know about you, but over here at Pancake HQ, it really hasn’t felt like summer! Sure, there are pleasant days, but it’s not the same as summers past is it? Where’s the warm breeze, the hot sunshine, the ice cream trucks and the picnics in the park? We had to abandon a mid-June summer BBQ only last week when the heavens opened! Good lord!
In retaliation against the cloudy skies, we are launching a nationwide appeal. Please, help us find summer! If found, return to us at Pancake HQ.
Sadly, there’s not much we can do about the weather. We can, however, bring a little more summer into our lives with a deliciously fruity pancake brunch this weekend. Start with our divine Raspberry & White Chocolate Pancakes, and end with a cool Mango Mimosa.

Mango Mimosas
- Pour 20ml of our Little Pancake Co Mango Coulis into the bottom of a champagne glass
- Top with 100ml of sparkling wine, Prosecco or Champagne
- Decorate with a cocktail umbrella and a slice of strawberry or a raspberry
